This is the sauce to go with Columbia River Salmon. From my collection of handwritten recipes. Ingredients:
1 cucumber, peeled, seeded and diced |
2 tablespoons finely chopped green peppers |
1 tablespoon fresh lemon juice |
1/4 teaspoon tarragon, crumbled |
1/4 teaspoon salt |
1 teaspoon sugar |
1 tablespoon chopped fresh dill (or 3/4 tsp. dried dill) |
1 tablespoon chopped fresh parsley |
3/4 cup plain nonfat yogurt |
1/4 cup light mayonnaise |
Directions:
1. Pat diced cucumber with paper towel to remove excess moisture. Combine cucumber with all remaining ingredients in a bowl. Stir to mix well, then cover and refrigerate up to 2 days. Bring to room temperature before serving. |
