I found this in a TOH cookbook a few years ago and just loved it. The combination of the cream cheese and cucumbers really can't be beat. I have made this in large sandwiches for lunch and also cut the bread into cute little shapes for showers. I have always used the pumpernickel bread but you could vary this to your taste. Ingredients:
1 (8 ounce) carton spreadable cream cheese |
2 teaspoons ranch dressing mix |
2 -3 cucumbers, peeled and thinly sliced |
8 slices pumpernickel bread |
Directions:
1. Combine cream cheese and dressing mix. Spread on 4 of the 8 slices of bread. Top with cucumber slices then another slice of bread. Serve immediately. |
