Light creamy cucumber spread for making cucumber finger sandwiches. Ingredients:
2 c. cucumber, peeled and shredded |
8 oz. low-fat cream cheese |
2 tbsp. chopped green onion (including stem) |
1/2 tsp. worchestershire sauce |
1/2 tsp. salt |
1/4 tsp. garlic powder |
Directions:
1. Peel 2 large cucumbers and shred using a manual shredder or food processor, put in colander and drain for one hour. Put out cream cheese to soften. 2. After the hour is up, squeeze out excess water. 3. Combine all ingredients and store in a covered container in the the fridge. 4. Serve as a dip or put 1/4 c. on each sandwich cut and enjoy. |
