Cucumber Salsa Cups

The perfect pre-dinner nibble. Low calorie and refreshing, yet with a bit of a kick.
Ingredients:
1 cucumber, peeled
1 small red onion, very finely chopped
2 tomatoes, very finely chopped
2bsps of freshlt chopped basil or coriander
1 tsp (i use more) of finely chopped red or green chilli
few drops of vinegar
salt and freshly ground black pepper
basil or coriander leaves to garnish
Directions:
1. Slice the cucumber into 2cm pieces.
2. Lay these on a flat surface and use a tsp to scoop out a little hollow in each one.
3. Mix together the red onion, tomatoes, basil or coriander and chilli.
4. Season with the vinegar and a little salt and pepper.
5. Spoon some of the mixture into each cucumber cup.
6. Serve, garnished with basil and coriander leaves.
