This recipe is from Vegetarian Times cookbook. It's delicious and simple. My grandmother used to make this in the summer, and I love it. Ingredients:
1/4 cup white vinegar |
1/4 cup water |
1/4 cup sugar |
2 cucumbers |
Directions:
1. If using regular cucumbers, cut in half lengthwise and scoop out the seeds. Cut the cucumber halves in thin slices It also calls for a small white onion, thinly sliced. Place the cucumber and onion slices in a non-aluminum bowl and sprinkle with 1/2 t salt. By the way, what did you do with the red cabbage?. 2. Stir together the vinegar, water and sugar, until the sugar dissolves. 3. Pour over the cucumbers and let marinate for at least 15 minutes. |
