Cool cucumbers, spicy garlic and chilies, and sweet fruit combine in a salad that tastes, smells, and looks great. Ingredients:
3 large seedless cucumbers |
3 cloves garlic, minced |
3 hot chilies (tame it down if wanted/needed), minced |
1 large can mandarin oranges, drained |
2 cups dried apricots, chopped |
1 red bell pepper, sliced thin about 1.5” long |
1 yellow bell pepper, sliced thin about 1.5” long |
olive oil |
lemon juice |
salt |
chopped mint leaves |
Directions:
1. Halve cucumbers and slice thin. Place in large bowl and salt lightly. 2. In a separate bowl, combine garlic and chilies. 3. Add the juice of one lemon. 4. Slowly add about three tablespoons of olive oil and mix well. 5. Add oranges, apricots, and peppers to cucumbers. 6. Dress with olive oil mixture. Add more olive oil at this point if desired/needed. 7. Add about half a cup of chopped mint leaves. 8. Toss well and chill for at least an hour before serving. |
