This tangy cucumber salad is perfect to go with Mexican or middle eastern food. Warning: I've made this for a few years and I'm so used to making it that I don't measure things anymore, so the amounts are approximate. Ingredients:
1 cucumber |
1 tablespoon olive oil |
2 tablespoons vinegar |
3 green onions, sliced |
1 teaspoon lemon juice |
1/4 teaspoon salt |
Directions:
1. Cut cucumber in half lengthwise then slice. 2. Mix all ingredients in a medium sized bowl. 3. Serve immediately or refrigerate until serving. |
