The Vegetarian Kitchen Table Cookbook Ingredients:
2 english cucumbers |
3/4 cup sour cream |
1 tablespoon red wine vinegar |
1 tablespoon dijon mustard |
salt and pepper |
1 teaspoon chopped chives |
Directions:
1. Peel and seed cucumbers. Cut into 1/4 inch slices. 2. In a large bowl, combine sour cream, vinegar, mustard, and salt and pepper to taste. 3. Add cucumbers and toss to combine. Sprinkle with chives. Cover and refrigerate for at least an hour before serving. |
