The Caribbean, Cucumber Salad. Recipe from Cooking time is chill time. Ingredients:
2 large cucumbers, peeled |
1 teaspoon salt |
1 small chili pepper, seeded, minced |
2 teaspoons lime juice |
1 garlic clove, minced |
Directions:
1. Slice the cucumbers lengthwise and remove seeds with a melon baller or spoon. Slice each half into 1/2 inch pieces. Place them in a bowl and sprinkle on the salt. Toss gently and let sit for 30 minutes. Drain well. 2. Place the cucumbers in a serving bowl and add the chilies, lime juice, and garlic. Toss well. Cover and let salad sit at room temperature for 1 hour before serving. |
