This recipe came from my mother-in law's neighbor, Chuck. We were visiting her in Wisconsin and Chuck brought this over one afternoon for us to enjoy with our dinner. It was so good that after dinner I knocked on his door and asked for the recipe - which he was kind enough to share. My family calls this The Pickle because it reminds us of homemade bread and butter pickles, only better. :) Cooking time is actually cooling time in the fridge. Ingredients:
2 cups sugar |
1 cup white vinegar |
7 cups thinly sliced cucumbers, unpeeled (about 3 cucumbers ) |
1 cup sliced celery |
1/2 cup green pepper (diced) |
1 medium onion (diced) |
1 teaspoon salt |
1/4 teaspoon celery seed |
1 (4 ounce) jar diced pimentos (undrained) |
Directions:
1. Heat sugar and vinegar until sugar dissolves. Allow to cool. 2. In a large bowl, combine rest of ingredients. Pour cooled sugar/vinegar mixture over cucumber mixture. Mix well. Allow to set overnight or for at least 8 hours. 3. Enjoy! |
