Raita (RI-tah) is a popular salad in India and is a combination of chopped cucumber and tomato, yogurt and seasonings. Ingredients:
1 (16-ounce) carton plain fat-free yogurt |
1 cup chopped seeded peeled cucumber |
1 cup chopped seeded tomato |
1/2 cup minced red onion |
1/4 cup chopped fresh mint |
1 teaspoon ground cumin |
1/2 teaspoon salt |
Directions:
1. Spoon yogurt onto several layers of paper towels; spread to 1/2-inch thickness. Cover with additional paper towels; let stand 10 minutes. Scrape into a bowl using a spatula; stir in remaining ingredients. Cover and chill 2 hours; stir before serving. |
