Cucumber Raita Or Pachadi |

Pachadi refers to a traditional South Indian side-dish . I have fond of memories of it being served during weddings , It is typically made of finely chopped and boiled vegetables with coconut paste and tempered in oil . Read more . It is similar to the north Indian Raita . Yogurt based pachadi can be made of any vegetable, although cucumbers, squash, mango, bitter gourd or pineapple are common and is eaten with rice and a lentil curry . Ingredients:
1 cucumber , skin and seeds removed and cubed |
1/2 c coconut , 1 green chilli and 1 tsp cumin - coarsely grounded |
1 c thick yogurt , beaten |
temper |
1 tsp mustard seeds |
1/2 tsp fenugreek seed |
1 tsp ginger strips |
1 dry red chilli , broken |
1 sprig curry leaves |
Directions:
1. Fry the cucumber in 1 tbsp oil in a closed pan , keeping a low flame . 2. When half done , add the grounded paste and mix for few secs and check the salt . 3. Remove and cool it . 4. Add the yogurt and temper . 5. Serve FRESH . |
