A perfect accompainment to either pappadums or a spicy curry Ingredients:
1/2 cucumber (diced) |
1/2 teaspoon salt |
1 pint natural yoghurt |
2 spring onions (trimmed & sliced) |
1 teaspoon ground cumin |
1 teaspoon caster sugar |
2 tablespoons lemon juice |
2 tablespoons fresh mint (chopped) |
Directions:
1. Place the diced cucumber in a bowl and sprinkle with salt. Stir in the other ingredients and chill until ready to serve. |
