This is something I make quite often during the summer, especially when family is visiting from the Lower 48. Never lasts long. Ingredients:
3 to 4 medium cucumbers, sliced |
1 to 2 medium onions, sliced |
1 tbsp. dill weed |
2-3/4 cups sugar |
1-1/2 cups vinegar |
3 cups water |
1 tsp salt |
Directions:
1. Slice the cucumbers & onions and place in a large bowl. Add the dill weed and set aside. 2. In a saucepan, combine sugar, vinegar, water & salt; bring to a boil. 3. Pour over cucumber mixture. 4. Cover & refrigerate for 3 hours or overnight. 5. Yield: 6 Cups 6. I've altered this recipe from time to time depending on how many cucumbers I have. I always make sure I have enough of the sugar/vinegar mixture to cover all the veggies. |
