From Cooking Light. Ingredients:
2 cups cold water |
1 cup cucumber, coarsely chopped |
1/4 cup sugar |
1/4 cup fresh lime juice |
12 mint leaves |
3/4 cup rum |
1 cup sparkling water, chilled |
1 cup crushed ice |
4 sprigs mint |
4 slices cucumbers |
4 lime wedges |
Directions:
1. Place 2 c water and chopped cucumber in a blender; process til smooth. Strain through a sieve into a med bowl; discard solids. 2. Place 1 T sugar, 1 T lime juice, and 4 mint leaves in a 2 c glass measure; crush with a wooden spoon or muddler. Add 3 T rum and about 1/2 c cucumber mixture; stir to dissolve sugar. Stir in 1/4 c sparkling water. Place 1/4 c ice in a 12 oz glass and pour mixture over. Garnish with 1/4 of the mint sprigs, cucumber slices and lime wedges. |
