Ingredients:
1 large cucumber
1 small onion, chopped fine
1 tablespoon fresh mint, chopped
1/4 cup white vinegar
1 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon lemon pepper seasoning
Directions:
1. Peel cucumber and chop into 1/4-inch cubes.
