Ingredients:
3 cups finely diced seeded peeled cucumber (about 2 large)
1/4 cup light mayonnaise
2 tablespoons finely chopped fresh mint
2 tablespoons finely chopped fresh flat-leaf parsley
1 teaspoon grated lemon rind
1 tablespoon fresh lemon juice
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
