Again a great use of excess cukes from the garden! This is simple, delcious and refreshing. One may increase recipe as desired. Adding the avocado is optional A lovely pale green soup!
Ingredients:
2 large cucumbers, peeled and seeded and chopped
juice from a large lime
small bunch of basil
greek yoghurt or sour cream
salt and pepper to taste
Directions:
1. Blend all high speed except
2. yoghurt to puree
3. Add yoghurt or sour cream and blend well
4. season to taste
5. Chill well
6. Note: an addition of 1 ripe avocado may be added
