Cucumber Garbanzo Appetizer Shells |

This is based on the combining and tweaking of Cucumber and Garbanzo Bean Salad and Italian Chopped Salad in Shells. An easy way to have salad as finger food. Cook time is really chill time. Ingredients:
12 ounces jumbo pasta shells |
2 cups cucumbers, finely diced |
1/2 cup red onion, finely chopped |
2 cups tomatoes, finely diced |
1/2 cup basil, chopped |
1 cup feta cheese, crumbled |
2 (15 ounce) cans garbanzo beans, drained |
4 tablespoons olive oil |
4 tablespoons red wine vinegar |
1 1/2 tablespoons sugar |
1 1/2 tablespoons lemon juice |
2 garlic cloves, minced |
1/2 teaspoon salt |
1/4 teaspoon pepper |
Directions:
1. Cook shells al dente according to package directions, rinse in cold water; set aside. 2. Mix salad ingredients together. 3. Whisk dressing ingredients together and toss with salad. 4. Stuff salad into pasta shells. 5. Chill 2-4 hours. |
