Cucumber-Feta Salsa With Pita Chips |

The salsa is great as a summer's day appetizer or as a side dish with grilled chicken. Ingredients:
3 (8 inch) pita bread, split in half |
cooking spray |
1/4 teaspoon salt |
1 cup crumbled feta cheese |
2 tablespoons fresh lemon juice |
1/4 teaspoon fresh ground black pepper |
1 1/2 cups cubed seeded peeled cucumbers |
1 cup finely chopped red onion |
3 tablespoons chopped fresh mint |
3 tablespoons chopped fresh dill |
8 lemon wedges |
Directions:
1. Preheat oven to 350°F. 2. To prepare pita chips, cut each pita half into 8 wedges. 3. Arragne wedges in a single layer on a baking sheet coated with cooking spray. 4. Lightly coat pita wedges with cooking spray; sprinkle with salt. 5. Bake at 350 degrees for 10 minutes or until crisp. 6. To prepare salsa, combine feta cheese, juice, and pepper; partially mash with fork. 7. Add cucumber, onion, mint, and dill. 8. Serve salsa with pita chips and lemon wedges. |
