This is a nice companion with an afternoon sandwich or as a light snack all by itself. Ingredients:
1 english cucumber |
1/2 cup cider vinegar (i prefer rice wine vinegar) |
1/2 cup water |
3 tbsp sugar |
1 tspn kosher salt |
' 1 cup crumbled feta cheese |
fresh mint, chopped, to tasted |
Directions:
1. Very thinly slice the cucumber (with or without skin) 2. Spread evenly in a shallow baking dish. 3. Combine sugar, salt, vinegar, and water in a small sauce pan. 4. Over very low heat, heat the mixture until the salt and sugar dissolve completely. 5. Remove sauce pan from heat, allow to cool and then pour over the layered cucumbers. 6. Cover the dish and place in refrigerator for at least 3 hours. 7. When ready to serve, drain the cucumber slices well. 8. Place the cucumber on an serving dish, crumble feta cheese over the cukes, and garnish with mint. 9. Enjoy!! |
