Another very impressive appetizer sure to please all. Very refreshing and a nice tasty dish good anytime and anywhere. Enjoy Ingredients:
2 scallions |
1 lemon |
1 lime |
3 large hothouse cucumbers |
20 medium cooked shrimp peeled and deveined with tails intact |
1/4 cup thai sweet chili sauce |
Directions:
1. Trim away root end of scallions then cut scallions into 1” lengths then slice into thin shreds. 2. Place in bowl of ice water to curl about 10 minutes then dry on paper towels. 3. Using zester remove zest from lemon and lime in long fine strips. 4. Slice cucumber into rounds 1/2 thick then trim to make uniform rounds using cookie cutter. 5. Place cucumber rounds on a serving platter. 6. Top each with a shrimp then drizzle with chili sauce. 7. Garnish with scallion curls and lemon and lime strips. |
