This is a refreshing cold soup that is perfect summer fare for when it is HOT! Feel free to use light or fat-free sour cream and half-and-half in this dish. I love the zing from the hot sauce. I think this might be from an old issue of Southern Living. Ingredients:
2 cucumbers, peeled, seeded and coarsely chopped |
1 green onion, coarsely chopped |
1 tablespoon lemon juice |
1 (16 ounce) container sour cream |
1 cup half-and-half |
1 tablespoon fresh dill, minced |
salt and pepper |
1/8 teaspoon hot sauce |
fresh dill, springs |
Directions:
1. Precess first 3 ingredients in a blender or food processor until smooth, stopping to scrape down sides. 2. Pour into large bowl; stir in sour cream and next 5 ingredients. 3. Cover and chill 2 hours. Garnish soup, if desired. |
