A light summery dish or side. Ingredients:
1 lb prepared seitan or 1 lb quorn pieces, brand chick'n tenders |
1 large cucumber, peeled and diced |
1 cup chopped spearmint, leaves |
1 1/2 cups cooked couscous |
Directions:
1. Mix ingredients together lightly. 2. Refrigerate until chilled. 3. If desired, serve in a tomato shell on a lettuce leaf and garnish with mint sprigs. |
