Refreshing and great for a BBQ get together, or as a appetizer any time of year. Pol Martin Cookbooks Ingredients:
1 small cucumber |
4 ounces cream cheese |
1/4 teaspoon paprika |
1 teaspoon horseradish |
1 tablespoon mayonnaise |
1/2 baguette, thinly sliced and toasted |
salt and pepper |
Directions:
1. cut cucumber in half, lengthwise, set one half aside. 2. peel other half, seed and grate flesh into bowl. 3. add cheese, paprika, horseradish and mayo to grated cucumber, season with salt and pepper. 4. seed remaining cucumber and slice thinly with peeling. 5. spread cucumber/cheese mixture over toasted rounds of bread and top with slices of cucumber. 6. serve. |
