The Complete Idiot’s Guide to Glycemic Index Snacks Ingredients:
2 cups jicama, julienned |
2 cups cabbage, shredded |
1 1/2 cups cucumbers, julienned |
1 cup red onion, thinly sliced |
1 cup red bell pepper, julienned |
1 tablespoon fresh cilantro, finely minced |
1/4 cup lime juice (2 limes) |
2 tablespoons olive oil |
1/8 teaspoon salt |
1/8 teaspoon pepper |
Directions:
1. Combine all vegetables and cilantro. 2. In a small bowl, whisk together lime juice, olive oil, salt and pepper. Toss with vegetables. Serve chilled. |
