Cucumber, Apple, and Mint Cooler |

This is from the May 2010 issue of Cooking Light, and it looks perfect for the upcoming summer! Ingredients:
1 cup cucumber, chopped, peeled, and seeded (about 8 oz) |
1/3 cup frozen apple juice concentrate, unsweetened |
1/4 cup cold water |
1/4 cup fresh mint, chopped |
10 ice cubes (about 4 oz) |
Directions:
1. Place all ingredients in a blender and process until smooth (2 minutes). 2. Serve immediately. |
