This cool, yogurt-based side dish complements spicy Indian cuisine. Ingredients:
2 medium cucumbers, peeled, seeded, and finely chopped |
1 medium tomato, seeded and finely chopped |
1 serrano chile, seeded and minced |
1 1/2 cups plain nonfat yogurt |
1/4 cup finely chopped fresh mint |
1/2 teaspoon cumin seeds, toasted |
1/2 teaspoon salt |
Directions:
1. Combine all ingredients in a medium bowl; stir well. Cover and chill 1 hour. |
