Cucumber and Tomato Salad |

A local Afghan restaurant serves this with dinner. Light and refreshing. Time does not include time for the salad to chill before serving. Ingredients:
2 kirby cucumbers, peeled |
1 large plum tomato |
1 tablespoon lemon juice |
1 tablespoon olive oil |
1 garlic clove, pressed |
1/4 small red onion |
1 tablespoon fresh parsley, chopped |
1/4 teaspoon dried dill |
salt and pepper |
Directions:
1. Finely chop the vegetables. 2. Lightly mix with the remaining ingredients. 3. Refrigerate for 2 – 4 hours and adjust salt and pepper to taste. |
