A local Afghan restaurant serves this with dinner. Light and refreshing. Time does not include time for the salad to chill before serving.
Ingredients:
2 kirby cucumbers, peeled
1 large plum tomato
1 tablespoon lemon juice
1 tablespoon olive oil
1 garlic clove, pressed
1/4 small red onion
1 tablespoon fresh parsley, chopped
1/4 teaspoon dried dill
salt and pepper
Directions:
1. Finely chop the vegetables.
2. Lightly mix with the remaining ingredients.
3. Refrigerate for 2 – 4 hours and adjust salt and pepper to taste.
