Cucumber And Melon With Mint Vinaigrette

I like this dressing a lot, it is good on cold grilled lamb chunks (leftover kebobs) and grilled veggies with an Israeli couscous. Minty cool refreshing on cukes and melon for a something different salad.
Ingredients:
1/2 cup of extra virgin olive oil
1/2 cup of best white wine vinegar /splurge with champagne vinegar
1/2 teaspoon of dijon style mustard
3 tablespoons of finely minced fresh mint
1 tablespoon of finely minced parsley
big pinch of sugar
big pinch of salt
1 ripe honeydew melon, peeled, seeded and chunked
1 english cucumber, peeled and chunked
Directions:
1. In a jar with a tight fitting lid, combine the dressing ingredients.
2. Shake like crazy. Good exercise!
3. Let stand a room temp for 40 minutes to meld the flavors.
4. Shake vigorously just before pouring just enough to moisten the chunks of melon and cukes.
5. Chill and serve.
6. Great with a grilled meat. Especially a grilled lamb! Good marriage of flavors.
