This is a delicious, simple, and refreshing, and filling vegetarian sandwich, perfect for picnics or hot days.
Ingredients:
2 slices multigrain bread (we prefer milton's)
2 tablespoons hummus
6 thin slices cucumber
2 slices mozzarella cheese (can also use swiss)
Directions:
1. Slather the hummus on the bread slices.
2. Layer the cucumbers on one of the bread slices.
3. Top the cucumbers with the cheese slices.
4. Close the sandwiches and enjoy!
