A friend of mine gave me some very nice garden cucumbers. I usually cut the cucumbers in half and scoop out the seeds with a spoon, but these were nice enough to just slice and make this simple salad. It's very quick to make, but I would recommend chilling it at least overnight before serving. Ingredients:
2 cucumbers, very thinly sliced |
green onions, very thinly sliced |
2 tablespoons vinegar (or 2 tablespoons lemon juice) |
2 tablespoons sour cream (or 2 tablespoons yogurt) |
salt and pepper, to taste |
1 teaspoon sugar |
1 teaspoon chopped fresh dill (optional) |
Directions:
1. Mix cucumbers and onions together. 2. Mix dressing ingredients. 3. Add to cucumbers, chill till very cold & serve. |
