Cuban Pumpkin and Pasta Salad |

This creation is another attempt to introduce more Pumpkin into my diet. I am a huge fan of Cuban spice combinations as well. Ingredients:
3 cups spinach |
3/4 cup whole wheat pasta |
1/2 cup canned pumpkin |
1/4 teaspoon cumin |
1/8 teaspoon smoked paprika |
1/8 teaspoon ginger |
Directions:
1. Add 3 cups of Spinach into a salad bowl and set aside. 2. Bring two cups of water to a boil. 3. Add pasta, cook until soft. 4. While pasta is cooking, mix pumpkin with cumin, smoked paprika, and ginger. 5. Heat pumpkin in the microwave for 30 seconds and scoup over spinach. 6. When pasta is finished, strain and add to pumpkin and spinach. 7. Mix together (the heat from the pumpkin and pasta will wilt the spinach just enough). |
