Prep: 5 minutes; Cook: 8 minutes. Choose a banana that is firm, yet ripe, so that it will hold its shape when cooked. Ingredients:
2 teaspoons ground cumin |
1/4 teaspoon ground red pepper |
1/4 teaspoon ground cloves |
1/4 teaspoon salt |
2 (4-ounce) boneless center-cut pork loin chops (about 1/2 inch thick) |
cooking spray |
1 banana, diagonally cut into 1/4-inch-thick slices |
1 large garlic clove, minced |
2 teaspoons grated lime rind |
1 tablespoon fresh lime juice (about 1/2 lime) |
Directions:
1. Combine first 4 ingredients; rub spice mixture evenly over both sides of pork. 2. Heat a large nonstick skillet coated with cooking spray over medium-high heat. Add pork, and cook 3 minutes on each side or until done. Transfer pork to a plate, and keep warm. 3. Coat pan with cooking spray; add banana and garlic, and sauté 1 minute. Stir in lime rind and juice; cook 30 seconds. 4. Place pork chops on plates; spoon banana mixture over pork. |
