I love Cuban black beans and this recipe is delicious. This is a smaller version of hers. Ingredients:
1 16 oz can of black beans |
1 medium onion, finely chopped |
1 large clove of garlic, finely chopped |
1 tbsp olive oil |
1/2 tbsp ground cumin |
1/2 tbsp balsamic vinegar ( i used cider vinegar because it was closest to the stove). |
salt and pepper to taste |
Directions:
1. Heat a frying pan or small pot and add olive oil. When hot, add the onions and garlic. When soft, add some salt, pepper and the cumin. Cook until fragrant. 2. Add the black beans with their liquid, 1/2 cup water and the vinegar. 3. Bring to a boil, lower heat and simmer for 20 minutes to let it thicken again. 4. Serve. It is traditional to serve this with white rice. I served it with boiled sweet potatoes and loved it. |
