Nutritious, delicious black beans lends a nice base for decoration with shrimp and a dollop of sour cream or creme fraiche. From the old 4th Street Grill in Berkeley, CA Ingredients:
2 cups black beans |
1 large coarsely chopped yellow onion |
2 cups chopped italian plum tomatoes |
6 peeled garlic cloves |
3 bay leaves |
1/2 tsp whole thyme |
1 tsp. coarsely ground pepper |
4-6 cups stock or water |
ham bone or prosciutto bone |
1 white onion, chopped |
a handful of coriander leaves |
peeled cooked shrimp for garnish(optional) |
sour cream or creme fraiche (optional) |
Directions:
1. Rinse beans and pick out dirt, etc. 2. Cover beans with water at least an inch over them. 3. Bring to boil, then turn off. 4. Leave beans for 2 hours. 5. Place beans in a large stock pot. 6. Add yellow onion, tomatoes, garlic, bay leaves and spices. 7. Cover with 4-6 cups stock or water. 8. Add ham or prosciutto bone. 9. Simmer, uncovered 2 hours, stirring every 15 minutes. 10. Garnish with chopped white onion and coriander leaves 11. Add shrimp if desired. 12. Add a spoon of sour cream or creme fraiche (optional) |
