Crusty Sauerkraut Casserole |

differnt spin on using sauerkraut! Ingredients:
2 med onions |
2 tbs melted butter or oil |
1 pkg sauerkraut prepared with wine |
pepper to taste |
3 bay leaves |
300 g cabanossi - type of smoked salami sausauge or similar |
1 pkg mashed potatoes ( for 4 servings ) or make your own recipe |
2 tbs sharp mustard |
3 egg yolks |
3 tbs creme fraiche |
2 tbs honey |
1 bunch parsley chopped |
Directions:
1. Fine chop the onions 2. Fry in butter or oil till golden 3. Add drained sauerkraut, pepper to taste and bay leaves and cook over low heat about 15 minutes, then remove bay leaves 4. Cut the sausage into thin slices and add to mixture 5. Prepare the mashed potatoes per pkg directions and add in some fresh chopped parsley 6. Place mashed potatoes in a casserole dish 7. Top with the sauerkraut mixture 8. Mix remaining ingrdients for the topping ( mustard, yolks, cream fraiche, honey ) 9. Spread over cabbage mixture 10. Bake 225C until well heated about 15 mins 11. Just before serveing sprinkle casserole with remaining fresh parsley |
