Crusty Dill-Garlic Salmon |

A quick and easy method for cooking salmon adapted from a National Seafood Educators recipe. Boneless cod, butterfly cut large shrimp, or halibut may also be prepared using this recipe. Ingredients:
2 tablespoons lemon juice |
2 tablespoons dry white wine |
1 1/2 tablespoons olive oil |
2 (6 ounce) salmon fillets |
1/2 cup breadcrumbs |
1/4 teaspoon garlic salt |
1/4 teaspoon dill weed |
1/8 teaspoon cayenne pepper |
1 tablespoon olive oil |
1 tablespoon lemon juice |
Directions:
1. Combine lemon juice, wine, olive oil and salmon fillets in a large ziploc bag; seal bag and marinate in refrigerator for 1 hour, turning occasionally. 2. Remove salmon fillets from bag and discard marinade; place fillets in a lightly oiled baking dish; toss bread crumbs, spices, olive oil, and lemon juice together in a small bowl; spread crumb mixture evenly over top and sides of salmon, pressing lightly to hold crumbs in place. 3. Bake at 400° for 12 minutes or until fish flakes easily when tested with a fork. |
