My mom's recipe. It tends to mold easily, so should be refrigerated after one day. You can also make muffins-reduce baking time to 10-15 minutes. Ingredients:
1 cup flour |
1 teaspoon salt |
3 1/2 teaspoons baking powder |
2 tablespoons sugar |
1 cup cornmeal |
1 beaten egg |
1 cup skim milk |
1/3 cup cooking oil |
Directions:
1. Preheat oven to 450. 2. Sift together flour, salt, baking powder, and sugar. 3. Stir in corn meal. 4. Combine egg, milk, and oil. 5. Add to dry ingredients. 6. Pour in greased 8 or 9 inch square pan. 7. Bake 25 to 30 minutes. 8. Let cool 5 minutes before cutting into 2 inch squares. |
