1 tablespoon butter |
3 cups grated zucchini, squeezed dry |
4 green onions, sliced |
1 red bell pepper, diced |
6 eggs |
3/4 cup shredded cheddar cheese or 3/4 cup fontina cheese |
1/2 cup soft fresh breadcrumb |
1/4 teaspoon salt (to taste) |
1/4 teaspoon fresh ground black pepper (to taste) |
Directions:
1. Preheat oven to 325°; grease a 10-inch pie plate or quiche dish. 2. In a large nonstick skillet, melt butter over med-high heat. 3. Add zucchini, green onions, and red pepper; cook, stirring often, for 5 minutes or until softened. 4. Let cool slightly. 5. In a large bowl, beat eggs; stir in zucchini mixture, cheese, bread crumbs, salt, and pepper. 6. Pour into pie plate. 7. Bake for 35-40 minutes or until set in center. |
