Crustless Spinach Quiche Redux |

Lower Fat version of Quiche Ingredients:
1/2 cup parmesan cheese , grated |
1 cup nonfat cottage cheese |
1/2 cup nonfat milk |
2 oz basil leaves |
1 tablespoon almond oil |
10 oz frozen spinach, thawed and squeezed to drain |
5 egg whites |
2 egg yolks |
1/4 tsp nutmeg, to garnish |
Directions:
1. Heat oven to 375°F. Spray quiche dish, 9x1 1/2 inche pie pan, with cooking spray. 2. Mix the cheese, the cottage cheese, the milk, basil, spinach and eggs until well blended; pour into quiche dish. Grate some nutmeg on the top. 3. Bake 25 to 30 minutes or until knife inserted in center comes out clean. 4. To serve, cut quiche into wedges. |
