A wonderfully flavorful quiche that is delicious hot or cold. You can easily substitute other veggies if chopped finely enough. Ingredients:
2 cups fresh spinach, chopped or 10 ounces frozen (thawed, chopped and patted dry) |
2 cups cottage cheese |
1 cup shredded co-jack cheese |
1/2 package bacon, cooked and chopped |
1/4 onion, finely chopped |
5 eggs, well beaten |
1/3 c. parmesean cheese, shredded |
salt and pepper, to taste |
sliced black olives (optional) |
Directions:
1. Combine all ingredients except egg and parmesean. Combine well. 2. Add egg and stir well. 3. Pour into well greased 9-inch pie crust. 4. Sprinkle parmesean cheese evenly over mixture. 5. Add olives (optional) 6. Bake at 350 degrees F for 40-50 minutes, or until a toothpick inserted in the center comes out clean. 7. Serve hot or cold. |
