This is a wonderful dish even for people who don't like spinach or broccoli. It's quick and easy and makes great left-overs. published by Vicki Schrupp. Ingredients:
3 ounces light cream cheese, softened |
1 cup skim milk |
4 eggs |
3 (12 ounce) cups shredded low-fat cheddar cheese |
1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry |
1 package frozen chopped broccoli, thawed and well drained |
1 small onion, finely chopped |
5 fresh mushrooms, sliced |
Directions:
1. In a small mixing bowl, beat cream cheese. 2. Add milk, eggs and pepper. 3. Beat until smooth. 4. Stir in remaining ingredients. 5. Transfer to a quiche pan coated with cooking spray. 6. Bake at 350 for 45 minutes to 1 hour. |
