Low Cal, Low Carb ... When you gotta have a pizza fix, given to me by a friend Makes 8 servings each = 130 cal., 6 fat, 7 carbs, 12 protein Ingredients:
2 cups reduced fat italian cheese blend (sargento) |
10 ounces spicy tomato & pesto sauce (classico) |
1/2 cup egg beaters egg substitute |
10 ounces frozen spinach (thawed and completely drained) |
canola oil cooking spray |
Directions:
1. Preheat oven to 400 degrees. 2. Defrost and drain spinach (get out as much water as possible). 3. Mix a few teaspoons of the cheese and sauce with the eggs and spinach. 4. Spread Mixture evenly onto a pizza pan that has been sprayed with canola oil. ( I didn't have a pizza pan so I used a roasting pan) It should be a thin layer. 5. Take remaining cheese and spread over the top of mixture and then pour remaining sauce over top. 6. Bake in pre-heated 400 degree oven for 20-30 minutes until cheese is golden and bubbly. |
