A low-carb version of the classic Greek dish adapted to what I had on hand. Healthy and filling. Ingredients:
12 ounces spinach, cooked and well-drained |
1 onion, diced |
2 garlic cloves, minced |
200 g light ricotta cheese |
1/3 cup low-fat plain yogurt |
2 eggs |
2 teaspoons dill weed |
2 teaspoons lemon juice |
salt and pepper |
Directions:
1. Sauté onions and garlic until tender. 2. Meanwhile, combine ricotta, yogurt, and whisked eggs. Add seasonings, lemon juice, spinach, and onion/garlic mix. 3. Transfer to greased deep-dish pie plate. 4. Bake in 375F oven for 40-45 minutes, until set. |
