I make this quiche for the family for supper more often than breakfast. It is popular with all of them and being crustless, is good for gluten-free diets. Ingredients:
1 lb bacon |
24 eggs |
2 bunches green onions |
2 cups shredded sharp cheddar cheese |
1/2 - 3/4 cup milk |
salt and pepper to taste |
Directions:
1. Preheat oven to 350 F. Spray a 9x13 baking dish with no-stick spray. 2. Cut the bacon into 1-2 inch pieces and fry until crisp. Drain and set aside. 3. Break eggs into a large bowl and whisk well. 4. Finely chop green onion and add to the egg mixture. 5. Add salt, pepper, milk and cheese. 6. Mix together and stir in cooked bacon. 7. Pour mixture into baking dish and bake 45 minutes or until knife inserted into the center comes out clean. 8. Let stand 10-15 minutes before serving. |
