If you're eating LOW CARB, this is the perfect breakfast entree for you. It's full of flavor, and color, and its texture is perfect. This recipe serves a crowd! Ingredients:
12 slices bacon |
2 tbsp creamery butter |
1 onion, chopped |
1 leek, chopped |
1 red bell pepper, chopped |
3 cloves garlic, minced |
1 10-oz pkg frozen, chopped spinach, thawed |
2 cups shredded cheddar cheese |
2 cups shredded havarti cheese |
12 eggs |
1/2 cup light cream |
1 tsp dried thyme leaves |
1/2 tsp salt |
1/8 tsp white pepper |
1/4 cup grated parmesan cheese |
Directions:
1. preheat oven to 350*F 2. Grease or spray a 9 x13 glass baking pan; set aside 3. in large skillet, cook bacon until crisp. 4. HINT: for less fat, cook the bacon in the microwave between paper towelling; the towels absorb the grease. 5. crumble bacon; set aside 6. reserve 1 tbsp bacon drippings 7. place drippings into skillet with 1 tbsp creamery butter 8. add garlic & leek to skillet 9. cook & stir for 5 minutes 10. add bell peppers & garlic; cook another 2 minutes 11. drain spinach well; add to skillet 12. remove from heat 13. place veggie mixture into baking dish 14. top with crumbled bacon 15. layer cheddar & Havarti on top 16. in large bowl, beat the eggs with the cream, thyme, salt, and pepper, until smooth 17. pour into baking dish, over contents 18. sprinkle with Parmesan cheese 19. bake 35-45 minutes, until egg mixture is set and the top is beginning to brown. 20. let stand 5 minutes to firm up, then serve. |
