Crushed Potatoes and Olives |

I have no idea where this came from - torn from a magazine at some stage . Preparation time does not include time to boil potatoes. Ingredients:
1 kg large potato, cooked |
1/2 cup grated parmesan cheese |
1/2 cup black olives, pitted, sliced |
1/2 cup olive oil |
salt and pepper |
Directions:
1. Preheat oven 180 C. 2. Roughly crush cooked potatoes. 3. Toss with remaining ingredients. 4. Season well. 5. Loosely pack into an ovenproof dish. 6. Bake 20 minutes. |
