This recipe is from a book my mom gave me called Gifts of Good Taste. I made these for a cookie/candy exchange. This did make 7 dozen for me. No baking. With a kitchen-aid this is so quick to make. Just melt in your mouth goodness. Give it a try and tell me what you think! Ingredients:
1 (7 ounce) jar marshmallow creme |
2/3 cup butter or 2/3 cup margarine, softened |
1 teaspoon vanilla extract |
6 cups confectioners' sugar, sifted |
1/4 cup finely crushed peppermint candy (about 10 hard round candies) |
1/2 cup semi-sweet chocolate chips |
6 ounces chocolate-flavored candy coating |
Directions:
1. In a large bowl, beat marshmallow creme, butter, and vanilla extract until well blended. 2. Gradually add confectioners sugar until mixture is well blended. 3. Knead mixture by hand 2 to 3 minutes. 4. Add crushed peppermint candies. 5. Shape teaspoonfuls of candy into 3/4-inch balls. 6. Place on a baking sheet lined with wax paper. 7. Chill 1 hour or until firm. 8. Melt chocolate chips and candy coating in the top of a double boiler over hot water. 9. Using a fork, dip candies halfway into melted chocolate, shaking off excess chocolate. 10. Return to baking sheet lined with wax paper. 11. Chill until chocolate hardens. 12. Store in airtight container in a cool place. |
