Crunchy Topped Sweet Potatoes |

A new twist on an old favorite, sweet potatoes. Goes great with pork or poultry. Could even have this dish for breakfast or brunch, yummy. Ingredients:
6 sweet potatoes, peeled |
1/2 cup brown sugar |
1/4 cup butter, melted |
1 tsp. cinnamon |
1/2 cup applesauce, homemade if you can |
2 tbsp. butter |
1 cup granola, homemade if you can |
1/2 cup pecan pieces |
Directions:
1. Cut potatoes into 1 chunks and place in a 3-4 quart crockpot. 2. Combine brown sugar, 1/4 cup butter, cinnamon and applesauce in small bowl; blend and pour over potatoes. 3. Cover crockpot and cook on low for 6-8 hours until potatoes are tender. 4. When ready to serve, melt 2 tbsp. butter in small skillet and add granola and pecan pieces. 5. Cook over low heat for 5-6 minutes until fragrant. 6. Sprinkle over sweet potatoes and serve. |
